Cinder Toffee

featuredFor the first time in a very long time, I’ll be missing bonfire night in the UK. I don’t know why, but I just love bonfire night!

Standing around a big fire, fireworks, friends and lots of toffee- treacle or cinder.

For the past 3 years I have made treacle toffee for my friends so that we all can have shattered teeth, unfortunately being in Germany not only do they not have bonfire night, but they also do not sell treacle. Unlike golden syrup, I can’t make my own.

So, all that was left for me to do was make some yummy cinder toffee!

You will need:

  • 100g Golden Syrup (store bought or make your own)
  • 200g Caster sugar
  • 40g Butter
  • 1/2 tsp vinegar
  • 1tsp Bicarbinate of Soda
  • 2 tbsp water.

Line a 15cm square tin – I used a loaf tin.

Put the syrup, butter, sugar and water in a large heavy bottomed saucepan.

Do NOT stir the mixture! Swirl the pan until everything is melted.

Boil for around 10-15 minutes until a teaspoon of the hot toffee dropped into cold water becomes a hard ball. If you have a sugar thermometer this should be 138°c.

Remove the pan from the heat and add the 1/2 tsp vinegar and 1 tsp bicarbonate of soda – this will bubble up.

Give it a quick stir and pour immediately into a tin.

Once it has cooled using a large knife cut the toffee into chunks.

I used mine to top some delicious chocolate and cinder toffee cupcakes! Yum!
