Lovely Lemon Loaf

If you’re having one of those moments when you just NEED cake, this is a perfect recipe to try. Really simple, and very little in the way of faff.

What you need:Lemon-loaf-1

  • 3 large eggs  (170g)
  • 170 g self raising flour
  • 170gcaster sugar
  •  170g unsalted butter (room temp and diced)
  • Zest of 2 lemons
  • Lined loaf tin

Preheat your oven to 180°C.

Add all your ingredients into your stand mixer. Mix on a medium speed until all your ingredients are combined and the mixture is light and fluffy.

Pour your mixture into a lined loaf tin and smooth out the top. Place in the oven at 180°C for around 30 minutes.

Meanwhile, make your lemon drizzle using the juice of your 2 lemons, plus 150g of icing sugar.

Check your cake after 30 minutes. If a skewer inserted into the middle comes out clean, the cake is ready.

Leave your cake to cool slightly. Using a clean skewer, poke holes all over the cake. Pour your lemony drizzle all over the cake and leave to one side to cool completely. I like to do this whilst the cake is still slightly warm as it helps to soak into the cake!

I finished my cake off with an extra drizzle of lemon icing using a piping bag.
