When my parents moved to Australia 10 years ago I discovered the most amazing biscuits ever. Anzac Cookies.
The oaty, coconutty, buttery yumminess that is these cookies.
I also decided as tomorrow is Anzac day in Australia I thought today would be the time to revive my old recipe for these tasty treats.
These are so simple and easy to make, they also only take 8 minutes in the oven to bake so they are great when you need something tasty quickly.
Ingredients
- 100g Butter
- 100g Sugar
- 100g Plain flour
- 85g Rolled Oats
- 85g Dessicated Coconut
- 1Tbsp Golden Syrup
- 1 tsp Bicarbonate of soda
- 2 tbsp Boiling water
PRe-heat the oven at 160c. In a large bowl combine the flour, sugar, oats and coconut together.
Melt the butter and golden syrup in a pan on the hob. Add the boiling water to the bicarbinate of soda. Mix, then add into the butter mixture.
Pour this mixture into the dry one and give it a good mix until everything is combined.
Place dollops of this mixture onto a lined baking try, make sure that you leave around 2cm around the cookie to allow for any spreading. Bake at 160c for around 8-10 minutes.
Leave to cool on the baking tray for around 5 minutes then transfer to a wire rack to cool completely.
